MAINT: Update to use the latest docker for GPU lectures

The following lectures need updating to make use of CUDA=12.5 docker container

[ ] lecture-jax https://github.com/QuantEcon/lecture-jax/pull/181 (includes CUDA=12.5)
[ ] lecture-python.myst
[ ] lecture-stats

This can be paired with migrating to use GitHub Actions based instances
