Fix broken image in update blog post #168

Currently in prod the image located at /assets/img/writing/blog/2023-09-28-quilt-update/flexver-comparison-demo.png 404 dues to a typo in the filename.

This PR fixes that.

My apologies, I've only now noticed #166. Although I disagree with how this PR fixes the issue, flexver is the correct spelling, not flexer.
