Update overview to custom listing #12

Took a stab at re-formatting the overview page to "give users a sense of direction", per https://github.com/R-ArcGIS/planning/issues/1.

I used a "custom listing" to change the format of the gallery cards and added a section for community contributions. I'm happy to remove that if it's not something we want. I can also obviously make any modifications to the custom listing if you have ideas about how this should look!

ETA: the images I threw in were pretty random/basic so we can definitely replace those if desired.
