Open-api docs not building [BUG] #441

Describe the bug the open-api docs are not building as described in the README due to an outdated spring-docs version

To Reproduce Steps to reproduce the behavior:

  1. Go to /v3/api-docs
  2. See error

Expected behavior Should show docs

Simple fix, made the issue so it's clear that #439 is more critical than the name suggests
