Added Codecov CI #28

This PR includes the following:

Added codecov CI
renamed environment.yaml to conda/environment-dev.yaml
updated data folder to inst/data folder
updated paths in test

TODO:

Once #4 is merged, update the ci to remove cd MFAssignR/
