updated to poetry build system
updated workflows
updated conda env files

@zargham-ahmad let's maybe remove the conda stuff from the repo as I think that poetry is able to handle most of it and testing the conda build locally also does not really work reliable or gives no real idea of whether the bioconda package will work or not
