This PR include the following:

disabled key conversion for the matchms tools mentioned in issue #480
handled string sanitization ([],{},\, (/, +,-, () are already part of default)) for matchms add key
updated test and test data

closes #480

Please adress the single comment, otherwise looks good - maybe lets include the string sanitizing issue also in this PR as it is related to matchms add key?
