[Feature] document config spec to support default 'settings' #250

What problem(s) do you aim to solve?

in the api spec for mapper: in the /config endpoint: Config must have the settingsDefault field, settingsDefault field must have patientVariables and modelParameters and selectors fields, each field much contain values for all supported variables parameters or selectorsthis should be done for all plugin typeswhether this should done in the yaml or developers' guide i'm not sure.

What feature solves it and why? Briefly, support the idea, include pictures as needed, and alternatives considered:

@xu-hao I'm assigning this back to you because it seems to overlap with the configFactoryDefault that David and you have discussed - is that right?
