[Story mode] Add optional challenges

[NicEastvillage]

Adds the following to story mode:

• Support for optional challanges
  • The next region can be unlocked without completing these challenges allowing for more content behind less restrictions
  • The name is automatically prepended "Optional" for clarity
• One optional challenge for each region, except Championssnipe which got two!
