docs(app): Add human-readable docs for JSON Schema #18

Experimental: Add files generated by JSON Schema for Humans, which give a more human-firendly view into the JSON schema.

If we find this sort of thing useful, I'd probably set up a GH action to keep the docs in sync with the actual schema file.
