[Bug]: Update to GitHub Runners now has Mac OS latest running with arm #4892

Describe the Bug

The update to the github runners has Mac OS latest running with arm which causes a package/disk image to be created that can not be installed on intel machines

To Reproduce

Try and install the mac installs on an intel machine

Expected Behaviour

Should create intel images which work on both machines
