Prepare for v1.0.1

Description

• Update the minimum dependencies in all the places to match the pyproject.toml (mostly setuptools_scm but also lunarsky in one place).
• Update the minimum dependencies: setuptools_scm>=8.1 and scipy>=1.8 to fix errors in the min_versions CI
• Prepare for a new version because we need to get out a version that is compatible with numpy 2.0
