Thanks for the start of this. I just cut version 1.07 (on Rubygems) with lots of changes.

Fixes a security issue
Universally fixes utf8 encoding
Updates readme

Check out #8 and mind testing with the official gem to make sure nothing got missed when I refactored?

So far so good on my side, but just as an aside, I am actually testing this using Jekyll 3.8.5 (because that's the version of Jekyll supported by GitHub Pages) rather than 4. This means I'm tracking your master branch in my own fork under the jekyll-3.x branch.

So far, all my projects utilizing this Gem are currently building without an issue, so I'm very grateful. :)
