Try to Extract/Upstream OpenAPI Models

This repo includes openapi generated models provided by @stadiamaps (@ianthetechie) for valhalla. In an effort to keep this up to date & reduce maintenance. We should move these to their own source libraries or attempt to push them upstream. If accomplished, we could remove the openapi generation:
