We need to make it easier for users (especially non-devs) to run the app without having to download docker or any other dependencies.

[x] Replace the hacky migrations on app startup with a proper fix. For some reason the current hacky migrations fix stops logs from showing in the terminal
[x] Tidy up the Debian + Wine Dockerfile for Windows bundles, make bundling flow easier
[ ] Bundle a MacOS version (needs Rami)
[ ] Streamline bundling for each OS in a script
In the future:
would be nice to have a cleaner way to serve updates, and a way to safely persist things like the db.sqlite in something like AppData, so as not to wipe the user's data in between updates
possibility of testing pyinstaller bundles?
Possibility to open a browser tab with the correct address/port on startup to show the frontend
