I'm using the default config settings with OverflowingBars-v8.0.0
https://modrinth.com/mod/overflowing-bars/version/v8.0.0-1.20.1-Fabric
Having greater than 10 hearts is probably necessary to see the discoloration. OverflowingBars overlays the additional hearts beyond 10 (I have 14 hearts in the screenshots above).
Upgrading to ImmediatelyFast-Fabric-1.2.14 from ImmediatelyFast-Fabric-1.2.13 causes the issue. I've used previous versions of ImmediatelyFast and haven't come across this issue before.

Exactly this bug still happening with ImmediatelyFast-Fabric-1.2.18+1.20.4 and OverflowingBars-v8.0.0-1.20.1-Fabric. Minecraft 1.20.1, Fabric Loader 0.15.11.
It's happening to me on 1.19.2 as well, but it's not related to immediately fast it's something else I guess.
push (happening in 1.20.1 fabric)
On Fabric 1.20.1, with today's update ImmediatelyFast-Fabric-1.2.14+1.20.4 plus OverflowingBars-v8.0.0-1.20.1-Fabric, the overflowing health layer shows the incorrect colors:
