Update booking.json by adding alreadyBookedDates ranges arrays to every entity #273

I've updated the booking JSON to include arrays of already booked date ranges for each entity. This enhancement will allow the reservation calendar to display unavailable dates, preventing users from selecting dates that are already booked.
