Remove frankenstein code from useAssetsFolder for 2.0.0 release #255

We will have to update the some of the cypress tests as well

The "Frankenstein" code refers to https://github.com/ReadAlongs/Studio-Web/blob/3bbad6bbc242c47a90ae47a4e236acdb80781097/packages/web-component/src/components/read-along-component/read-along.tsx#L98-L116 and all uses of useAssetsFolder later in the file.
