Make file-naming conventions more consistent in data folders

If we expand the number of species, we may want to change the file names for data import to be specific to the taxon IDs. Currently, they are non-standardized, so it would be nice to go through all the files and clean up the names for clarity and consistency. They are also referenced in READMEs and Markdowns so we will need to go through those and change them as well.

I think that we should leave what we have now to avoid confusion, but next time that we do a significant data update, we should change the filename convention to this: subject_txid_date.txt

• annotations_txid7227_2024-04-18.txt
• uniprotID_txid7227_2024-04-18.txt
