I figured out some stuff about power sensors and have seen a couple posts asking questions, so thought I'd add my learnings as of 1.1. There may also be a bug with the power grid satisfaction detector in here, unsure.
To start off, Factorio turbines, solar panels, etc. only produces as much power as is requested, so that's why production always EXACTLY matches demand on those two sensors.
Satisfaction can be used to determine the actual numbers, when it is less than 100%.
Additionally, the satisfaction detector seems to only work when hooked directly to a combinator. It can then be wired up to a power pole/other circuit network.
Here, it is only attached to the electric pole:
With a decider combinator added (no configuration whatsoever, seems to just need the circuit connection):
