The goal here is to replace "Education" with OpenAlex Institution data

[ ] Map + Migrate "Education" for existing users with OpenAlex institutions
[ ] Create endpoint which allows fetching of institution data to be used in the client
[ ] Create endpoint for updating institution data
[ ] Update client to interact with new endpoints
