After talking with @ReticentJohn on Mastodon, it turns out that the only analytics Amaroq collects are Apple's diagnostics (tied to iOS Diagnostics and Usage) and Firebase notification-related data. The notification-related data is only collected if you opt into the push notification service, and is deleted by turning off notifications or logging out. Additionally, none of it is collected in local builds.1
This allayed my fears about using the app, but I had to contact the developer to find it out. It would be great to have this information in the privacy policy, so you can see it without having to ask for clarification.
Update: as of version 1.1.13, Firebase has been removed completely! The privacy policy will be updated eventually to reflect that, so I'm closing this.
