add wrangling data page, edits to ggplot2 section #16

This PR:

in the interest of keeping these tutorials as brief as possible, moves the explanation of tidying data to the section on tidying with tidyr in the Wrangling Data page
uses the newer pivot_longer() and pivot_wider() instead of gather() and spread()
rewrites the first bit of the ggplot2 tutorial to use the original penguins data

Thanks for changing from gather() and spread()! I forgot which versions were the new ones, and yes, good call to move the tidying stuff away from visualization. Already a lot of info for people :)
