Adding shinytest2 tests #21

[x] Set up shinytest2 testing structure
[x] Add first test as an example
[x] Run tests automatically via GA
[x] Add more complicated tests to be used as an example

Action points:

[ ] @RichardHooijmaijers to check on different data for different OS.
[x] @hypebright to add tests for other plot types, unfortunately ptype="all" will not work
[x] @hypebright to add additional "regular" testthat tests for structure of plots (to be edited by @RichardHooijmaijers at a later point in time)

Note that at this stage all actions will fail due to CRAN warnings - but shinytest2 test is passing ✅

@RichardHooijmaijers ignore the last commits on changing paths on Windows. It took some trial and error because I don't have a Windows runner available right now locally. If we encounter more issues with Windows I'll set up a Windows VM so we can test properly 👍
