Bump node version from 16 to 20 #80

Implements https://github.com/RoadieHQ/backstage-entity-validator/issues/79

I'm not a node developer, but this seems to be the work that was needed to make it run on node 20. Someone please review this.

Thanks @karelbemelmans ! I'll merge this in partially and craft a new release locally from this update (for security reasons, there's a lot of generated code).
