Add text/images/signatures to existing PDF's
This takes 5 seconds using xournal.
The obvious solution to all these problems is LET PDOG USE MICROSOFT WINDOWS!!!

Don't try to act like we're a humane employer, @GeeH.
(We just need her serial number in the morning before we can order her a restore disk from ASUS, but we can at least try to get her acquainted in the meantime.)

Just found out about PDF Chain which is an awesome/simple GUI for handling exactly this.
Edit text on an existing PDF
@pdogdotpro also found out that LibreOffice Draw allows opening / editing PDF's (I had no clue), though I just tried it and had limited success... One PDF imported okay, another had a messed up font. Tried inserting an image and was unable to resize the image at all. (Could be that fonts were actually not embedded properly on the one test PDF and I just don't know the GUI for inserting/manipulating images very well.)

lol, @PHLAK, yeah, I thought about that at first too, but decided it's better not to even bring up most CLI-based solutions right now — primary goal for now is preventing this laptop from ending up in a swimming pool, and it's likely one more "Okay, open a terminal", might put her over the edge.
hahaha wow. Looks like I'm a big trouble maker and I need to not be so dramatic (as @EvanDotPro suggested during one of my "I don't wanna use Linux" fit throwing sessions). Would it be ludicrous of me to admit that this morning was a turning point, and that I might actually be liking (this term used very loosely) this now...
That being said, @GeeH, don't go giving away that extra Windows 8 license quite yet, I'm still working on getting my breathing back to a normal rate...

Obviously, PhantomPDF doesn't work on Linux...
