It would be great if /health would be default for >=appVersion-5.3.0

As appVersion is already 5.3.1, I've changed path to /health.

Uhm, I don't even understand how this happend, but currently it's /api/info hard coded again https://github.com/RocketChat/helm-charts/blob/master/rocketchat/templates/chat-deployment.yaml#L152
