move ead3 to a modular structure #124

As discussed with @ailie-s and @karinbredenberg , this moves EAD3 from a monolithic TEI document towards separate documents for attributes and elements.

Note that the build process is identical from the user side - the script now supports XInclude - although I haven't tested it on Windows yet.
