Allow Feature Selection in "values.yaml"

Description

This pull request makes it possible to select/deselect karydia features in the "values.yaml" file including defaultNetworkPolicy and karydiaAdmission. Moreover, it is possible to specify the defaultNetworkPolicyExcludes option.
