Migrate docs to structured jekyll setup

• Use jekyll with just-the-docs to create new docs structure for gh-pages.
• Migrate existing sections of README.md to new structure
• Rework and improve chapters by adding references, improving language and fixing inconsistencies
  • there might still be a lot of room for improvement, especially in advanced topics
