Added binder link to readme and updated requirments #24

I added matplotlib to the requirements as some of your examples require it. There may be other libraries that should be included for them to work correctly.

I also added a binder link so people can try out the examples straight away

Hi @jonititan, thanks for the PR! I haven't used Binder before, it looks like a good addition. Happy to see more of your contributions, if you're interested, as I'm sure there are other areas to the cookbook that need updating. =)
