Clean up environment variable documentation #68

There are a variety of environment variables used for running tests, some of which are required and some of which are mandatory. These variables should be reviewed to make sure they are all necessary, and documentation added as appropriate to the top-level README file.

I agree these are all necessary. I'm changing this bug to be for documenting how they work.
