Improve manifest files and keep copies for analysis

The current manifest files include only OPUS ID and base filename. The manifest file should be renamed to manifest.csv and include:

• OPUS ID
• Full filename with path spec from the archive root
• Size in bytes
• Checksum
• Last modified time
• Version
• OPUS product abbreviation
• OPUS product category
