If we're doing a country named university, it's either the modifier form with University (like "American" or "Latvian" University), or "University of Latvia".
Not sure. But I'm looking at https://github.com/SFDO-Community-Sprints/Snowfakery-Edu/blob/ba31ddfbd5bf674756cee8104132280c2b3ec484/faker_edu/__init__.py#L146 as the culprit here.
