[ Eklavya Projects 2023 ] : Adds new projects for the mentorship program #124

Following are the changes made on Eklavya projects page:

  1. Added 2023 projects (some logos are yet to be updated)
  2. Added a onClick function so that mobile users can click on i button to toggle it
