Update DoD

This work is going into uncharted territory. Gatsby+Tina docs are lacking.

Update the DoD

• [x] Ensure relevant Tina Gatsby docs are created/updated for each change
• [x] Done Videos
• [x] Report the bugs

The workflow will be

1. Figure something out
2. Document it
3. Report any TinaCMS bugs we find
4. Done

e.g. Data fetching - do we do this in Gatsby-node.js? or somewhere else? After this question is answered, create a new docs page explaining how to do data fetching if we need to do a workaround, we will create a bug in the TinaCMS repo so it gets fixed
