Update docker-compose to match test2 rollout #1379

current docker-compose still uses nginx instead of the sbs-server container.

Goal is to have an easy-to-set-up local dev env for SBS. So it should also mount the current repo in the docker als the SBS source, so it is easy to make changes outside the container. And also set the --reload option for gunicorn for example.
