Changelog

create products folders for MODEL-AD in apps/, libs/ and docker/
add product-specific commands for MODEL-AD
add MODEL-AD to the list of products in GitHub issue templates

Just want to confirm with this PR:

The official name and casing of the project is: MODEL-AD
The product name in the monorepo (kebab case) is then: model-ad
