[SYNR-1527] synapser release for version 2.1.0 #337

Problem:

New version of synapser, v2.1.0, needs to be released

Solution:

  1. Updated package description, changelog and docs to reflect the most recent changes
  2. Fixed unrecognized escape in character string issue when parsed example for topic 'synStore'
