SLEAP model names cannot contain underscores #423

In Social0.1 we broke our convention of SLEAP model names containing underscores: e.g. the model name in \ceph\aeon\aeon\data\processed\test-node1\0000006\2023-12-05T14-00-00\topdown_multianimal_id should be topdown-multanimal-id instead of topdown_multianimal_id.

This causes issues with the Pose reader which breaks down underscores in the SLEAP-tracked filepath to find the associated model config file.

To fix this I will run a script that changes these filenames to use - instead of _
