I use to publish most of my plugins under the unlicence. But that's obviously a personal choice. I don't think the generator needs to follow the core actually. However I will be fine with switching to MIT. In such case the copyright should be "SassDoc team" or the like.

I also use the Unlicense for most of my personal projects.
There's no problem with the core and the generator having different licenses, MIT and Unlicense are both really permissive licenses and I believe they are compatible (what wouldn't be compatible with public domain (Unlicense) after all?).
Anyway the core don't depends directly on the generator and vice versa so whatever license we choose in both projects, everything is fine.
