I think we should have some examples of documents (both grayscale and color) so people can play around and see how ScanTailor processes images.

Don't litter the main repo. Make a separate one: scantailor-advanced-demo. Add a link to it in the README. See https://github.com/ImageProcessing-ElectronicPublications for examples (there are plenty of them).
