fix docs by escaping all rows with a `*` in it, except single `*`

So this is mostly a pretty hacky emacs macro job. I just escaped all lines that contain a * in accented quotes and fixed a couple of other small things that nim doc complained about.

This means the docs are now created successfully, although they are rather ugly.
