Preserving both latlon DimCoords and 2D AuxCoords on target cube #358

✨ Feature Request

When regridding onto a target whose grid is defined both by DimCoords and 2D AuxCoords, only the DimCoords will be preserved in the result. This can cause some iris functions (e.g. plotting) to fail. There could be a case for preserving both sets of coordinates in such cases, parhaps set by a keyword or some config.
