The change to the environment file itself is minor - we obviate the need to specify the Python version needed to build this environment.
The updates to the notebook is also minor - however re-running the cells and committing them creates a large diff. This will be eventually solved by using jupytext and committing .py files instead of the ipynb. All of the notebooks in this folder should be eventually replaced by their python script equivalent, with the notebooks being generated by GitHub actions (#40)
