Mermaid parsing appears to have changed a bit too much between the Visual Code version and that used by jekyll in our GitHub action. Removing the stray
and replacing the bold text ** markers with seems to do the trick. The layout isn't nearly as good though as the text isn't wrapped sensibly. This is at least compiling though.
