Maintenance: re-organizing assets folders #59

Hi Micha, I'm proposing some changes to the organisation of assets so that everything is nicely grouped together under assets:

I've modified paths accordingly in the different files concerned. I've also added my own data to the contributors file.

Hey @BuckyBuck135, thank you for organizing the assets and also changing all the image paths as needed. I will merge with the main codebase. I wonder if we might want to add some documentation about file structure and where one should import images they might be using... 🤔 I'll give it some thought, and you can let me know if you have suggestions.

We can display a file tree in the main readme / contributing
