Explore using GitHub Projects to track TODOs week-to-week #344

looking deeper into GH issues and there is now a way to assign due dates apparently! It's not very intuitive or integrated, so dunno how it will work but found it here: https://stackoverflow.com/questions/47311041/how-can-i-have-a-deadline-for-an-issue-at-github and you can see the couple I attached dates to here https://github.com/orgs/SeaGL/projects/5/views/2

I also saw this, but dunno if makes sense to use: https://github.com/marketplace/actions/due-dates

I don't see any display of that date on the issue, and dunno if there will be any sort of notification, so dunno... Milestones seem to work, but I dunno if we'd want to have like a milestone each 2 week period or what?

The thing that might be important to identify here is that we could have a few project views setup, and expect folks to check particular views? We also need to consider how this can be used to do inter-committee vs intra-committee work.
