This PR updates a few things mainly related to keeping up-to-date with Earth Engine changes around data catalog.

Updates Landsat Collections to use LANDSAT/LC**/C02/T1_L2 collections instead of the deprecated C1 collections
Updates Sentinel-2 to use the COPERNICUS/S2_SR_HARMONIZED collection
Code clean up on functions

Fixes #39
