Stop copy pasting GitHub action code and use a centralised action published by Shopify.

The code was originally copied from Polaris GitHub action

@alex-page Thanks for adding this and the context. I'm fine with merging this and testing / trialing out the workflow should we have any changes that come forward in the future.
